Asparagus, feta & lemon salad

May is the most beautiful month where everything is blossoming, and we don’t want to spend ages in the kitchen! So here are 2 super quick, no cook recipes bursting with nutrients.

Asparagus, feta & lemon salad

This is such a simple but delicious salad. Perfect side dish (in which case it would serve 4 people) or a perfect light lunch served with french bread (in which case would serve 2).

125g asparagus

2 baby gem lettuces

2 cups frozen peas

100g feta cheese or vegan feta (the Violife one is amazing)

Zest of one organic, unwaxed lemon

Few fresh mint leaves

Dressing

2 tablespoons lemon juice

4 tablespoons olive oil

1 teaspoon dijon mustard

Salt and pepper to taste

 

  1. I don’t cook the peas, I simply leave them to defrost. But if you don’t want to wait for them to defrost, or would prefer to cook them, then cook them as you normally would, drain, rinse with cold water and place in a serving dish.
  2. Repeat step 1 with the asparagus. I normally steam vegetables, but you can cook them anyway you like.
  3. Tear the leaves off the lettuce and arrange in the dish with the peas and asparagus.
  4. Cut the feta into small cubes and arrange on top of the vegetables.
  5. Top with some fresh mint leaves & finely grated zest of one lemon.
  6. For the dressing, simply whisk the ingredients together, season to taste and pour over the salad just before serving.

 

Chicken mayo salad

This couldn’t be easier, but so yummy! If you don’t eat meat, just use firm tofu in place of the chicken.

Serves 2 - 4 depending on whether it’s eaten alone, with the first salad or really nice in a sandwich. 

175g cooked chicken breast or Tofu chopped into cubes (if you’re using tofu, pat dry with some kitchen roll to remove any excess liquid).

½ cucumber chopped into cubes

2 celery sticks sliced up

100g red seedless grapes, sliced in half.

2 heaped tablespoons mayonnaise (or vegan mayonnaise)

2 heaped teaspoons dijon mustard

  1. Mix the mayo and the mustard together.
  2. Chop up all the other ingredients and mix together in a serving dish.
  3. Add the mustard mayo,  garnish with some fresh parsley (optional).
