Gingerbread and white chocolate brownies.

Wow, here we are in December. I know it’s a busy month but for those of you who love a bit of festive baking, first up a bit of christmas baking, Super easy to make and freeze well.

Gingerbread and white chocolate brownies.  Makes 10 - 12

8 tablespoons light olive oil (or similar, flavourless oil)

80g white chocolate chips ( You can get dairy free ones by Moo free if necessary)

30g chopped walnuts

1 large egg

½ cup soft brown sugar

¼ cup dark agave syrup or date syrup

1 ¼ cup self plain flour

2 teaspoons ground ginger

I teaspoon baking powder

Preheat the oven to 180c 

  1. Mix the agave syrup and olive oil together.
  2. In another bowl combine the flour, sugar, ginger and baking powder.
  3. Stir the wet ingredients into the dry until everything is well mixed in. Then stir in the walnuts and the white chocolate chips. 

Press the mixture into a baking dish (roughly 18cm by 13cm)

Bake for 25 mins.

Remove from the oven and leave to cool. Then dust with icing sugar, Serve.

And for those of you who are rushing around trying to fit everything in, here a super quick smoothie. Ideal if you don’t have time to make a proper lunch and still want to nourish your body well. 

 

Green Smoothie     Serves 2

70g frozen peas (bear with me!)

1 whole pear (pips and stalk removed)

1 tablespoon almond butter

Thumbnail amount of peeled, fresh ginger

2 medjool dates

2 handfuls baby spinach

Plant based milk to blend (around 200ml, but depends on how thick you want it).

  1. Put everything into the blender, Blitz.
  2. Drink, nourish, energise!
