Summer is finally here and gone are the mornings we need to warm up with a hot bowl of porridge.

This month I’m sharing two summer breakfast ideas that will help you well on your way to your five a day.

 

First up we AVOCADO PUDDING

 

Not gonna lie, this is a bit like Marmite - love it or hate it! I love it and the bonus is it’s packed with nutrients. Protein, healthy fats and two of your five a day.

 

AVOCADO PUDDING & SMOOTHIE BOWL

Makes 1 serving.

 

INGREDIENTS

100g avocado flesh (peeled with the stone removed)

30g vanilla protein powder

2 medjool dates

100 ml plant based milk. (I use Almond)

 

Place all the ingredients into the blender and blitz. If you want a more liquidy texture just add some more milk.

Topping ideas for both the Avocado pudding and the smoothie bowl.  Nuts, seeds, dried fruit, granola, maple syrup, desiccated coconut, cacao nibs, cereal, fresh fruit, peanut butter or any other nut butter.

 

SMOOTHIE BOWL

This also makes a nice alternative to ice cream on a summer’s day. I find my blender struggles with larger berries like strawberries, so I use a mix of raspberries, blackberries, red currants and black currants.

 

Makes 1 serving

 

1 small banana

150g frozen berries

200ml plant based milk

 

Place all the Ingredients into your blender and blitz until you get an “ice cream” texture.

Top with as many toppings as you like!
